20 Minute Chili Lime Shrimp with Quinoa

Description

A quick and easy shrimp dish marinated in chili and lime, served with fluffy quinoa for a healthy meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 lime, juiced and zested
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  3. Add shrimp to the skillet and season with chili powder, lime juice, zest, salt, and pepper. Cook for 3-4 minutes per side until shrimp are pink and opaque.
  4. Fluff the quinoa with a fork and serve topped with the chili lime shrimp. Garnish with fresh cilantro.

Notes

For a spicier version, add red pepper flakes. This recipe is perfect for a weeknight dinner and pairs well with avocado.
