Description

These Almond Cherry Cookies are soft, chewy treats packed with the nutty flavor of almonds and the sweet tartness of cherries, perfect for holiday baking or a quick snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons almond extract
  • 1 cup dried cherries
  • 1 cup sliced almonds

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugars until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the almond extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the dried cherries and sliced almonds.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a gluten-free version, substitute the all-purpose flour with a gluten-free blend. Store in an airtight container for up to 5 days.
