- 1 cup raw almonds
- 1 cup unsweetened shredded coconut
- 8 ounces dark chocolate, chopped
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- In a food processor, pulse the almonds until finely ground.
- Add the shredded coconut, dark chocolate, coconut oil, vanilla extract, and sea salt to the food processor.
- Process until the mixture is well combined and forms a dough-like consistency.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Refrigerate the truffles for at least 30 minutes to set.
- Serve chilled or at room temperature.
Notes
These truffles can be stored in an airtight container in the refrigerator for up to a week. For a nut-free version, substitute almonds with seeds.
