Description
A wonderfully moist and sweet quick bread swirled with cinnamon-sugar and tender apples, reminiscent of a classic apple fritter.

For the Crust:
- 2 large eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 medium apples, peeled and chopped
- 1/3 cup granulated sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, beat eggs with 1/2 cup white sugar and brown sugar. Mix in oil, milk, and vanilla. In a separate bowl, whisk together flour, baking powder, and salt. Stir the dry ingredients into the wet ingredients until just combined. Fold in the chopped apples.
- In a small bowl, mix together 1/3 cup sugar and cinnamon. Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon-sugar mixture. Top with remaining batter and sprinkle the rest of the cinnamon-sugar over the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
