For the Crust:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups finely chopped apples (such as Granny Smith)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Gradually blend the dry flour mixture into the wet ingredients until just combined. Fold in the chopped apples.
- Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan before cutting into bars.
