  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • Filling:
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup reduced apple cider
  • Topping:
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. For the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  3. Bake crust for 10 minutes, then remove and let cool.
  4. For the filling: In a large bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  5. Add eggs one at a time, beating after each addition. Stir in the reduced apple cider.
  6. Pour filling over the cooled crust and bake for 55-60 minutes, or until center is set.
  7. For the topping: Mix sour cream, sugar, and cinnamon. Spread over the baked cheesecake and bake for an additional 5 minutes.
  8. Cool completely, then refrigerate for at least 4 hours before serving.

Notes

Ensure apple cider is reduced to about 1/2 cup for concentrated flavor. Store in the refrigerator for up to 5 days.
