- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup reduced apple cider
- Topping:
- 1 cup sour cream
- 1/4 cup sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- For the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
- Bake crust for 10 minutes, then remove and let cool.
- For the filling: In a large bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, beating after each addition. Stir in the reduced apple cider.
- Pour filling over the cooled crust and bake for 55-60 minutes, or until center is set.
- For the topping: Mix sour cream, sugar, and cinnamon. Spread over the baked cheesecake and bake for an additional 5 minutes.
- Cool completely, then refrigerate for at least 4 hours before serving.
Notes
Ensure apple cider is reduced to about 1/2 cup for concentrated flavor. Store in the refrigerator for up to 5 days.
