Description

Soft and spiced whoopie pies infused with apple cider flavor, perfect for fall baking.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple cider
  • For the filling:
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons apple cider

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg and apple cider until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of batter onto the prepared baking sheets and bake for 10-12 minutes, or until the edges are set.
  7. For the filling:
  8. In a bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar, vanilla extract, and apple cider, beating until smooth.
  10. Once the cakes are cooled, spread the filling between two cakes to form sandwiches.

Notes

Store in an airtight container for up to 3 days. For a stronger apple flavor, reduce apple cider to a concentrate.
