Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and diced
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar for filling
  • 1 egg yolk for filling

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9-inch springform pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the softened butter until creamy, then add eggs one at a time, followed by sour cream and vanilla extract.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. For the filling, beat the cream cheese and 1/4 cup sugar until smooth, then mix in the egg yolk.
  6. Spread half of the batter into the prepared pan, layer with diced apples and cream cheese filling, then top with the remaining batter.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before removing and cooling completely on a wire rack.
