- 2 acorn squashes, halved and seeded
- 2 apples, cored and diced
- 1/4 cup chopped walnuts
- 2 tablespoons butter, melted
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Place squash halves cut side down in a baking dish and bake for 30 minutes.
- In a bowl, mix apples, walnuts, butter, brown sugar, and cinnamon.
- Remove squash from oven and stuff with apple mixture.
- Bake for an additional 20-25 minutes until tender.
Notes
For a vegan version, substitute butter with coconut oil.
