- 4 corn tortillas
- 1 cup refried beans
- 1 cup salsa
- 1 avocado, sliced

Instructions
- Heat a skillet over medium heat and add 1 tablespoon of vegetable oil.
- Fry the eggs to your desired doneness, about 2-3 minutes for sunny-side up, and set aside.
- In the same skillet, warm the corn tortillas for 1 minute on each side.
- Heat the refried beans in a small saucepan over low heat until warmed through.
- Assemble the dish by placing a warm tortilla on each plate, topping with a spoonful of refried beans, a fried egg, salsa, sliced avocado, crumbled queso fresco, and chopped cilantro.
- Season with salt and pepper to taste, and serve immediately.
Notes
For an authentic touch, use homemade salsa and fresh tortillas if available. Adjust spice levels by choosing mild or hot salsa.
