Ingredients

  • 1 cup cooked brown rice
  • 1 ripe avocado, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Optional: 1 jalapeΓ±o, sliced for spice

Instructions

  1. Cook the rice according to package instructions and let it cool.
  2. In a large bowl, combine the cooled rice, diced avocado, black beans, cherry tomatoes, red onion, and cilantro.
  3. Drizzle with lime juice and season with salt and pepper.
  4. Gently toss all ingredients to mix well.
  5. Optional: Add sliced jalapeΓ±o for extra heat.
  6. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.

Notes
