For the Crust:
- 2 slices of thick sourdough bread
- 1 large ripe avocado
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon red pepper flakes
- 2 tablespoons fresh cilantro, chopped
- Salt and black pepper to taste
- 1 tablespoon extra virgin olive oil
Instructions
1. Prepare the Crust:
- Toast the sourdough bread slices until golden and crisp.
- Cut the avocado in half, remove the pit, and scoop the flesh into a medium bowl.
- Add the lemon juice, a pinch of salt, and black pepper to the avocado. Mash with a fork to your desired consistency.
- Divide the mashed avocado evenly between the two slices of toast, spreading it to the edges.
- Top the avocado with the crumbled feta cheese.
- Sprinkle with red pepper flakes and chopped cilantro.
- Drizzle with olive oil and serve immediately.
