- 6 slices bacon, chopped
 - 1 tablespoon olive oil
 - 1 onion, diced
 - 2 cloves garlic, minced
 - 3 cups chicken broth
 - 2 cups milk
 - 1 package (16 oz) potato gnocchi
 - 2 cups shredded cheddar cheese
 - Salt and pepper to taste
 - Fresh parsley for garnish
 
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pot.
 - Add olive oil to the pot and sauté the diced onion until translucent, about 5 minutes.
 - Add minced garlic and cook for another minute.
 - Pour in chicken broth and milk, then bring to a simmer.
 - Add the potato gnocchi and cook according to package instructions, about 3-5 minutes.
 - Stir in the shredded cheddar cheese until melted and creamy.
 - Season with salt and pepper to taste.
 - Serve hot, topped with the crispy bacon and fresh parsley.
 
Notes
For a thicker soup, add a slurry of cornstarch and water before adding the cheese.
