Description

A hearty and creamy soup featuring gnocchi, bacon, and cheddar cheese, perfect for a comforting meal.


Ingredients

  • 6 slices bacon, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups milk
  • 1 package (16 oz) potato gnocchi
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the grease in the pot.
  2. Add olive oil to the pot and sauté the diced onion until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and milk, then bring to a simmer.
  5. Add the potato gnocchi and cook according to package instructions, about 3-5 minutes.
  6. Stir in the shredded cheddar cheese until melted and creamy.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with the crispy bacon and fresh parsley.

Notes

For a thicker soup, add a slurry of cornstarch and water before adding the cheese.
