Description

A hearty soup that combines the flavors of a bacon cheeseburger with creamy broth and vegetables.


Ingredients

  • 1 pound ground beef
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned; drain excess fat.
  2. Add chopped bacon, onion, and garlic to the pot; cook until bacon is crispy and onions are translucent.
  3. Stir in chicken broth and diced potatoes; bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Add shredded cheddar cheese and milk; stir until cheese is melted and soup is creamy.
  5. Season with salt and pepper to taste; serve hot.

Notes

For a thicker soup, add a roux made from flour and butter before adding the broth.
