- 1 pound ground beef
- 6 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 cups potatoes, diced
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef over medium heat until browned; drain excess fat.
- Add chopped bacon, onion, and garlic to the pot; cook until bacon is crispy and onions are translucent.
- Stir in chicken broth and diced potatoes; bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add shredded cheddar cheese and milk; stir until cheese is melted and soup is creamy.
- Season with salt and pepper to taste; serve hot.
Notes
For a thicker soup, add a roux made from flour and butter before adding the broth.
