Bacon Cheeseburger Soup

Description

A hearty soup that combines the flavors of a cheeseburger with bacon, ideal for a comforting meal.


Ingredients

  • 1 pound ground beef
  • 1/2 pound bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crisp. Remove and set aside, leaving the grease in the pot.
  2. Add the ground beef to the pot and cook until browned. Drain excess fat.
  3. Add the onion and garlic to the pot and sauté until softened.
  4. Stir in the chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in the shredded cheddar cheese and heavy cream until melted and creamy.
  6. Add the cooked bacon back into the soup and season with salt and pepper. Serve hot.

Notes

For a lighter version, use turkey bacon and low-fat cheese.
