A hearty soup that combines the flavors of a cheeseburger with bacon, ideal for a comforting meal.

- 1 pound ground beef
- 1/2 pound bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the bacon over medium heat until crisp. Remove and set aside, leaving the grease in the pot.
- Add the ground beef to the pot and cook until browned. Drain excess fat.
- Add the onion and garlic to the pot and sauté until softened.
- Stir in the chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in the shredded cheddar cheese and heavy cream until melted and creamy.
- Add the cooked bacon back into the soup and season with salt and pepper. Serve hot.
Notes
For a lighter version, use turkey bacon and low-fat cheese.
