- 1 pound ground beef
- 6 strips bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup carrots, shredded
- 2 cups cheddar cheese, shredded
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, cook the bacon over medium heat until crisp; remove and set aside.
- In the same pot, brown the ground beef with onion and garlic; drain excess fat.
- Add chicken broth, potatoes, and carrots; bring to a boil and simmer until vegetables are tender.
- Stir in milk and cheese until melted and creamy.
- Add the cooked bacon back in, season with salt and pepper, and serve hot.
