Description

A creamy soup that combines the flavors of a bacon cheeseburger with potatoes, beef, and cheese.


Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup shredded carrots
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups cubed potatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded Cheddar cheese
  • 1/4 cup sour cream
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook ground beef over medium heat until browned; drain and set aside.
  2. In the same pot, sauté onion, celery, carrots, and garlic until tender.
  3. Add chicken broth, potatoes, basil, and parsley; bring to a boil. Reduce heat and simmer until potatoes are tender.
  4. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  5. Gradually whisk in milk and cook until thickened.
  6. Stir the milk mixture into the soup pot. Add Cheddar cheese and stir until melted.
  7. Add cooked ground beef, sour cream, and bacon. Season with salt and pepper.
  8. Heat through and serve hot.
