A creamy soup that combines the flavors of a bacon cheeseburger with potatoes, beef, and cheese.

- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup shredded carrots
- 2 cloves garlic, minced
- 4 cups chicken broth
- 3 cups cubed potatoes
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded Cheddar cheese
- 1/4 cup sour cream
- 6 slices bacon, cooked and crumbled
- Salt and pepper to taste
Instructions
- In a large pot, cook ground beef over medium heat until browned; drain and set aside.
- In the same pot, sauté onion, celery, carrots, and garlic until tender.
- Add chicken broth, potatoes, basil, and parsley; bring to a boil. Reduce heat and simmer until potatoes are tender.
- In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
- Gradually whisk in milk and cook until thickened.
- Stir the milk mixture into the soup pot. Add Cheddar cheese and stir until melted.
- Add cooked ground beef, sour cream, and bacon. Season with salt and pepper.
- Heat through and serve hot.
