- 1 pound ground beef
- 6 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped bacon, onion, and garlic to the pot. Cook until the bacon is crispy and the onion is translucent.
- Stir in the beef broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add the shredded cheddar cheese and milk. Stir until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste. Serve hot.
