A hearty and creamy soup that combines the flavors of a classic cheeseburger with bacon, cheese, and ground beef.

- 1 pound ground beef
- 6 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large pot, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the pot.
- Add ground beef to the pot and cook until browned. Drain excess fat.
- Add onion and garlic to the pot and sauté until softened.
- Stir in chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in milk and cheddar cheese until melted and creamy. Season with salt and pepper.
- Serve topped with the cooked bacon.
Notes
For a thicker soup, add a roux or extra cheese. Adjust seasoning to taste.
