Description

A hearty and creamy soup that combines the flavors of a classic cheeseburger with bacon, cheese, and ground beef.


Ingredients

  • 1 pound ground beef
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add ground beef to the pot and cook until browned. Drain excess fat.
  3. Add onion and garlic to the pot and sauté until softened.
  4. Stir in chicken broth and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Stir in milk and cheddar cheese until melted and creamy. Season with salt and pepper.
  6. Serve topped with the cooked bacon.

Notes

For a thicker soup, add a roux or extra cheese. Adjust seasoning to taste.
