Description

A comforting soup that combines the flavors of a classic cheeseburger with bacon, cheese, and ground beef in a creamy broth.


Ingredients

  • 1 pound ground beef
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned; drain and set aside.
  2. In the same pot, cook the chopped bacon until crispy; remove and set aside, leaving the drippings.
  3. Add the diced onion and minced garlic to the pot; sauté until softened.
  4. Stir in the chicken broth, diced potatoes, and sliced carrots; bring to a boil and simmer until vegetables are tender.
  5. Add the cooked ground beef and bacon back to the pot; stir in the shredded cheddar cheese and milk until melted and creamy.
  6. Season with salt and pepper to taste; simmer for an additional 5 minutes.
  7. Serve hot.

Notes

For a thicker soup, add a roux or extra cheese. Garnish with additional bacon bits if desired.
