A comforting soup that combines the flavors of a classic cheeseburger with bacon, cheese, and ground beef in a creamy broth.

- 1 pound ground beef
- 6 slices bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
Instructions
- In a large pot, cook the ground beef over medium heat until browned; drain and set aside.
- In the same pot, cook the chopped bacon until crispy; remove and set aside, leaving the drippings.
- Add the diced onion and minced garlic to the pot; sauté until softened.
- Stir in the chicken broth, diced potatoes, and sliced carrots; bring to a boil and simmer until vegetables are tender.
- Add the cooked ground beef and bacon back to the pot; stir in the shredded cheddar cheese and milk until melted and creamy.
- Season with salt and pepper to taste; simmer for an additional 5 minutes.
- Serve hot.
Notes
For a thicker soup, add a roux or extra cheese. Garnish with additional bacon bits if desired.
