For the Crust:
- 1 lb whole carrots, peeled
- 8 slices thin-cut bacon
- 1/4 cup pure maple syrup
- 2 tbsp brown sugar
- 1 tbsp melted butter
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Parboil the carrots for 5-7 minutes until slightly tender but still firm. Drain and let cool.
- Wrap each carrot tightly with one slice of bacon, securing the ends.
- In a small bowl, whisk together the maple syrup, brown sugar, melted butter, pepper, and salt.
- Place the wrapped carrots on the baking sheet and brush generously with the maple glaze.
- Bake for 20-25 minutes, flipping halfway through, until the bacon is crispy and the carrots are tender.
