Bacon-Wrapped Carrots with Maple Glaze

A sweet and savory side dish where tender carrots are wrapped in crispy bacon and coated in a sticky maple glaze.

For the Crust:

  • 1 lb whole carrots, peeled
  • 8 slices thin-cut bacon
  • 1/4 cup pure maple syrup
  • 2 tbsp brown sugar
  • 1 tbsp melted butter
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Parboil the carrots for 5-7 minutes until slightly tender but still firm. Drain and let cool.
  3. Wrap each carrot tightly with one slice of bacon, securing the ends.
  4. In a small bowl, whisk together the maple syrup, brown sugar, melted butter, pepper, and salt.
  5. Place the wrapped carrots on the baking sheet and brush generously with the maple glaze.
  6. Bake for 20-25 minutes, flipping halfway through, until the bacon is crispy and the carrots are tender.
