- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 2 large apples, peeled, cored, and diced
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- For the glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- Add the diced apples to the dry ingredients and toss to coat.
- In another bowl, beat the eggs, then stir in the milk and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- While the fritters cool, whisk together the powdered sugar, milk, and vanilla extract for the glaze.
- Drizzle the glaze over the cooled fritters and let it set before serving.
Notes
For a crispier texture, bake a few minutes longer. Store leftovers in an airtight container for up to 2 days.
