Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the eggs, then stir in the milk and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed, then fold in the diced apples.
- Drop spoonfuls of the batter onto the prepared baking sheet, shaping into fritters.
- Bake for 15-20 minutes, or until golden brown.
- While the fritters cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract.
- Drizzle the glaze over the cooled fritters and serve.
