Ingredients

  • 2 large eggs
  • 1 cup milk
  • 2 medium apples, peeled and diced
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs, then stir in the milk and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed, then fold in the diced apples.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, shaping into fritters.
  6. Bake for 15-20 minutes, or until golden brown.
  7. While the fritters cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract.
  8. Drizzle the glaze over the cooled fritters and serve.
