Description

A sweet and savory Hawaiian chicken dish marinated in pineapple juice, soy sauce, and brown sugar, then baked to perfection.


Ingredients

  • 2 pounds chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated

Instructions

  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, garlic, and ginger.
  2. Add chicken thighs to the marinade and refrigerate for at least 2 hours.
  3. Preheat oven to 375Β°F (190Β°C).
  4. Place chicken on a baking sheet and bake for 45 minutes, basting occasionally with marinade.
  5. Remove from oven and let rest for 5 minutes before serving.

Notes

For a grilled version, cook on a barbecue grill instead of baking. Ensure chicken reaches an internal temperature of 165Β°F.
