- 2 pounds chicken thighs
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/3 cup ketchup
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
Instructions
- In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, garlic, and ginger.
- Add chicken thighs to the marinade and refrigerate for at least 2 hours.
- Preheat oven to 375Β°F (190Β°C).
- Place chicken on a baking sheet and bake for 45 minutes, basting occasionally with marinade.
- Remove from oven and let rest for 5 minutes before serving.
Notes
For a grilled version, cook on a barbecue grill instead of baking. Ensure chicken reaches an internal temperature of 165Β°F.
