- 4 large russet potatoes
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 cups fresh broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then prick them several times with a fork.
- Rub the potatoes with olive oil and season with salt and pepper.
- Bake the potatoes in the preheated oven for 45-60 minutes, or until tender.
- While the potatoes are baking, season the chicken cubes with garlic powder, salt, and pepper.
- In a skillet over medium heat, cook the chicken for 6-8 minutes until fully cooked.
- Steam the broccoli florets for 5 minutes until bright green and tender.
- Once the potatoes are done, slice them open and stuff with the cooked chicken, steamed broccoli, and shredded cheese.
Notes
For a crispier skin, brush the potatoes with oil before baking. Serve immediately for the best texture.
