Description

A hearty dish featuring baked potatoes stuffed with tender chicken and fresh broccoli, perfect for a wholesome meal.


Ingredients

  • 4 large russet potatoes
  • 2 boneless, skinless chicken breasts, cut into cubes
  • 2 cups fresh broccoli florets
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then prick them several times with a fork.
  3. Rub the potatoes with olive oil and season with salt and pepper.
  4. Bake the potatoes in the preheated oven for 45-60 minutes, or until tender.
  5. While the potatoes are baking, season the chicken cubes with garlic powder, salt, and pepper.
  6. In a skillet over medium heat, cook the chicken for 6-8 minutes until fully cooked.
  7. Steam the broccoli florets for 5 minutes until bright green and tender.
  8. Once the potatoes are done, slice them open and stuff with the cooked chicken, steamed broccoli, and shredded cheese.

Notes

For a crispier skin, brush the potatoes with oil before baking. Serve immediately for the best texture.
