- 2 cups long-grain rice
- 1 pound chicken thighs, boneless and skinless
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-safe pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant.
- Add chicken thighs and cook until browned on all sides.
- Stir in the rice and mixed vegetables, then pour in the chicken broth. Season with salt and pepper.
- Cover the pot and bake in the preheated oven for 45 minutes, or until the rice is tender and the liquid is absorbed.
- Let it rest for 5 minutes before serving.
Notes
For a vegetarian version, substitute chicken with tofu and use vegetable broth.
