Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced for garnish

Instructions

  1. Preheat the oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the chopped spinach, cream cheese, and Parmesan cheese until well combined.
  3. Lay out the salmon fillets and season with salt and pepper.
  4. Spread the spinach mixture evenly over each fillet, then roll them up tightly.
  5. Secure the rolls with toothpicks if necessary and place on the prepared baking sheet.
  6. Drizzle with olive oil and bake for 20-25 minutes, or until the salmon is cooked through.
  7. Remove from the oven, let rest for 5 minutes, and garnish with lemon slices before serving.

Notes

For a crispier exterior, broil for the last 2 minutes. Pair with a light salad for a complete meal.
