- 2 cups fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese

Instructions
- Preheat the oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
- In a bowl, mix the chopped spinach, cream cheese, and Parmesan cheese until well combined.
- Lay out the salmon fillets and season with salt and pepper.
- Spread the spinach mixture evenly over each fillet, then roll them up tightly.
- Secure the rolls with toothpicks if necessary and place on the prepared baking sheet.
- Drizzle with olive oil and bake for 20-25 minutes, or until the salmon is cooked through.
- Remove from the oven, let rest for 5 minutes, and garnish with lemon slices before serving.
Notes
