Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Season chicken breasts with salt, pepper, and oregano.
  3. In a large skillet, heat olive oil over medium heat and add garlic, cooking until fragrant.
  4. Add chicken breasts to the skillet and cook for 3-4 minutes per side until browned.
  5. Pour balsamic vinegar over the chicken and simmer for 2 minutes.
  6. Add spinach and cherry tomatoes to the skillet, stirring until spinach wilts.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until chicken is cooked through.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking. Serve with quinoa or a side salad.
