- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- 1 teaspoon dried oregano
Instructions
- Preheat oven to 375Β°F (190Β°C).
- Season chicken breasts with salt, pepper, and oregano.
- In a large skillet, heat olive oil over medium heat and add garlic, cooking until fragrant.
- Add chicken breasts to the skillet and cook for 3-4 minutes per side until browned.
- Pour balsamic vinegar over the chicken and simmer for 2 minutes.
- Add spinach and cherry tomatoes to the skillet, stirring until spinach wilts.
- Transfer the skillet to the oven and bake for 15-20 minutes until chicken is cooked through.
- Remove from oven and let rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking. Serve with quinoa or a side salad.
