Balsamic Marinated Flank Steak with Blue Cheese Crust

A savory and tangy flank steak marinated in balsamic vinegar and herbs, then topped with a rich, melted blue cheese crust.

For the Crust:

  • 1.5 lbs flank steak
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 4 oz crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Combine balsamic vinegar, olive oil, garlic, rosemary, pepper, and salt in a bowl to create the marinade.
  2. Place the flank steak in a large resealable bag, pour the marinade over it, and refrigerate for at least 4 hours or overnight.
  3. Preheat oven to 400°F (200°C). Remove steak from marinade and pat dry. Discard the used marinade.
  4. Heat an oven-safe skillet over high heat. Sear the steak for 3-4 minutes per side until a brown crust forms.
  5. Mix blue cheese, panko, and parsley in a small bowl. Press the mixture onto the top of the seared steak.
  6. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the cheese is melted and the steak reaches your desired doneness.
  7. Remove from oven, let the steak rest for 5-10 minutes before slicing against the grain. Serve immediately.

Notes

You can customize the seasonings to taste.
