  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the mashed bananas, sour cream, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chopped pecans.
  7. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely before serving.

Notes

For extra moistness, use overripe bananas. Store in an airtight container for up to 3 days.
