Cod with Potatoes and Salsa Verde

Description

A classic Basque dish featuring fresh cod baked with potatoes and topped with a vibrant salsa verde made from herbs and olive oil.


Ingredients

  • 500g cod fillets
  • 500g potatoes, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the salsa verde:
  • 50g fresh parsley
  • 20g fresh mint
  • 2 garlic cloves, minced
  • 100ml extra virgin olive oil
  • 1 tablespoon capers
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 200Β°C (400Β°F).
  2. Boil the sliced potatoes in salted water for 10 minutes until tender, then drain.
  3. In a blender, combine parsley, mint, garlic, capers, lemon juice, and 100ml olive oil to make the salsa verde; blend until smooth.
  4. Season the cod fillets with salt and pepper, then place them in a baking dish with the boiled potatoes.
  5. Drizzle the cod and potatoes with 2 tablespoons of olive oil.
  6. Bake in the preheated oven for 15-20 minutes until the cod is flaky and cooked through.
  7. Serve the cod and potatoes topped with the salsa verde.

Notes

For a crispier texture, broil the dish for the last 2 minutes. Pair with a dry white wine.
