Description
A classic Basque dish featuring fresh cod baked with potatoes and topped with a vibrant salsa verde made from herbs and olive oil.

- 500g cod fillets
- 500g potatoes, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- For the salsa verde:
- 50g fresh parsley
- 20g fresh mint
- 2 garlic cloves, minced
- 100ml extra virgin olive oil
- 1 tablespoon capers
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 200Β°C (400Β°F).
- Boil the sliced potatoes in salted water for 10 minutes until tender, then drain.
- In a blender, combine parsley, mint, garlic, capers, lemon juice, and 100ml olive oil to make the salsa verde; blend until smooth.
- Season the cod fillets with salt and pepper, then place them in a baking dish with the boiled potatoes.
- Drizzle the cod and potatoes with 2 tablespoons of olive oil.
- Bake in the preheated oven for 15-20 minutes until the cod is flaky and cooked through.
- Serve the cod and potatoes topped with the salsa verde.
Notes
For a crispier texture, broil the dish for the last 2 minutes. Pair with a dry white wine.
