Description

A hearty and flavorful soup made with a mix of 15 different beans, vegetables, and seasonings, perfect for a comforting meal.


Ingredients

  • 1 package (20 ounces) 15-bean soup mix
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 ounces) diced tomatoes
  • 8 cups vegetable or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 bay leaf

Instructions

  1. Sort and rinse the beans, then soak them overnight in water.
  2. Drain and rinse the beans, then place them in a large pot.
  3. Add the chopped onion, garlic, carrots, celery, diced tomatoes, broth, salt, pepper, chili powder, and bay leaf to the pot.
  4. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beans are tender.
  5. Remove the bay leaf before serving.

Notes

For a vegetarian version, use vegetable broth. Adjust seasoning to taste.
