A hearty and flavorful soup made with a mix of 15 different beans, vegetables, and seasonings, perfect for a comforting meal.

- 1 package (20 ounces) 15-bean soup mix
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 can (14.5 ounces) diced tomatoes
- 8 cups vegetable or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1 bay leaf
Instructions
- Sort and rinse the beans, then soak them overnight in water.
- Drain and rinse the beans, then place them in a large pot.
- Add the chopped onion, garlic, carrots, celery, diced tomatoes, broth, salt, pepper, chili powder, and bay leaf to the pot.
- Bring to a boil, then reduce heat and simmer for 2-3 hours, or until beans are tender.
- Remove the bay leaf before serving.
Notes
For a vegetarian version, use vegetable broth. Adjust seasoning to taste.
