Description

A hearty and flavorful baked burrito casserole that’s perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • Optional toppings: sour cream, guacamole

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in the black beans, corn, taco seasoning, and salsa. Simmer for 5 minutes.
  5. Place a layer of tortillas in the bottom of the prepared baking dish.
  6. Spread half of the beef mixture over the tortillas and sprinkle with half of the cheese.
  7. Repeat the layers with remaining tortillas, beef mixture, and cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Let cool for 5 minutes before serving. Add optional toppings as desired.

Notes

For a spicier version, use hot salsa and add jalapeños.
