A hearty and flavorful baked burrito casserole that’s perfect for family dinners.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 6 large flour tortillas
- Optional toppings: sour cream, guacamole
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the black beans, corn, taco seasoning, and salsa. Simmer for 5 minutes.
- Place a layer of tortillas in the bottom of the prepared baking dish.
- Spread half of the beef mixture over the tortillas and sprinkle with half of the cheese.
- Repeat the layers with remaining tortillas, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for 5 minutes before serving. Add optional toppings as desired.
Notes
For a spicier version, use hot salsa and add jalapeños.
