Description

This is the best carrot cake recipe ever! A moist and delicious classic with grated carrots, spices, and cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 large eggs
  • 2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups grated carrots
  • 1 (8 ounce) can crushed pineapple, drained
  • 1 (3.5 ounce) cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.
  3. Mix in flour, baking soda, baking powder, salt and cinnamon.
  4. Stir in carrots. Fold in pecans. Pour into prepared pan.
  5. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Notes

Use fresh carrots for the best texture and flavor. Store the cake in an airtight container.
