Description

Ingredients

  • 2 pounds boneless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, and black pepper.
  2. Add the chicken pieces to the marinade and toss to coat evenly.
  3. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  4. Preheat grill to medium-high heat.
  5. Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  6. Grill the kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through.
  7. Remove from grill and let rest for 5 minutes before serving.

Notes
