- 2 pounds boneless chicken thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, cumin, salt, and black pepper.
- Add the chicken pieces to the marinade and toss to coat evenly.
- Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat grill to medium-high heat.
- Thread the marinated chicken onto skewers, alternating with vegetables if desired.
- Grill the kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Remove from grill and let rest for 5 minutes before serving.
Notes
For extra flavor, add red pepper flakes if you like it spicy. Serve with rice or pita bread.
