- 6 large bell peppers, any color
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) tomato sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Cut the tops off the peppers and remove the seeds and membranes.
- In a skillet, cook the ground beef, onion, and garlic over medium heat until beef is browned.
- Drain fat and stir in cooked rice, tomato sauce, salt, pepper, and Italian seasoning.
- Stuff the peppers with the beef mixture and place in a baking dish.
- Bake for 45 minutes, then sprinkle with cheese and bake for an additional 15 minutes until cheese is melted.
Notes
For a vegetarian version, substitute ground beef with lentils or mushrooms.
