Delicious coffee-flavored cookies that are easy to make and perfect for coffee lovers.

  • 2 tablespoons instant coffee granules
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  2. Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  3. In a medium bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, mix the flour, instant coffee granules, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a stronger coffee flavor, increase the instant coffee to 3 tablespoons. Store in an airtight container for up to 5 days.
