- Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a medium bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, mix the flour, instant coffee granules, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a stronger coffee flavor, increase the instant coffee to 3 tablespoons. Store in an airtight container for up to 5 days.
