- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 diced tomato
- 1 chopped onion
- Optional: lettuce and salsa
Instructions
- Preheat oven to 400Β°F (200Β°C).
- Wash and pierce potatoes with a fork, then rub with olive oil and bake for 1 hour or until tender.
- In a skillet, cook ground beef over medium heat until browned.
- Drain fat and add taco seasoning according to package instructions.
- Once potatoes are done, split them open and stuff with the beef mixture.
- Top with shredded cheese, sour cream, diced tomato, and chopped onion.
- Serve immediately.
Notes
For a vegetarian version, substitute ground beef with black beans or plant-based meat.
