Description

Baked potatoes topped with savory taco meat, cheese, and fresh toppings for a hearty meal.


Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 diced tomato
  • 1 chopped onion
  • Optional: lettuce and salsa

Instructions

  1. Preheat oven to 400Β°F (200Β°C).
  2. Wash and pierce potatoes with a fork, then rub with olive oil and bake for 1 hour or until tender.
  3. In a skillet, cook ground beef over medium heat until browned.
  4. Drain fat and add taco seasoning according to package instructions.
  5. Once potatoes are done, split them open and stuff with the beef mixture.
  6. Top with shredded cheese, sour cream, diced tomato, and chopped onion.
  7. Serve immediately.

Notes

For a vegetarian version, substitute ground beef with black beans or plant-based meat.
