  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter, chilled and cubed
  • 68 tablespoons ice water
  • Filling:
  • 8 cups thinly sliced apples (about 8 medium apples)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • Streusel Topping:
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the crust: In a large bowl, mix flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough forms. Divide in half, shape into disks, wrap, and chill for 1 hour.
  2. Preheat oven to 400°F (200°C).
  3. Roll out one dough disk and fit into a 9-inch pie plate.
  4. Prepare the filling: In a large bowl, toss apples with sugars, flour, spices, salt, and lemon juice. Pour into crust.
  5. Prepare the streusel: Mix flour, brown sugar, butter, and cinnamon until crumbly. Sprinkle over filling.
  6. Roll out the second dough disk and place over the pie, or use for lattice if desired. Trim and crimp edges.
  7. Bake for 45-50 minutes until golden and bubbly. Cool before serving.

Notes

For a flakier crust, ensure butter is very cold. Serve with vanilla ice cream.
