For the Crust:
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 2 cups frozen mixed vegetables (corn, carrots, green beans, peas)
- 1 large potato, peeled and diced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot or Dutch oven, brown the ground beef with the onion and garlic over medium-high heat until the beef is no longer pink. Drain any excess fat.
- Add the beef broth, diced tomatoes with their juice, tomato sauce, potato, oregano, and thyme to the pot. Stir to combine.
- Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the frozen mixed vegetables. Cover and continue to simmer for another 10-15 minutes, or until the potatoes and vegetables are tender.
- Season with salt and pepper to taste. Serve hot.
