For the Crust:

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups frozen mixed vegetables (corn, carrots, green beans, peas)
  • 1 large potato, peeled and diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot or Dutch oven, brown the ground beef with the onion and garlic over medium-high heat until the beef is no longer pink. Drain any excess fat.
  2. Add the beef broth, diced tomatoes with their juice, tomato sauce, potato, oregano, and thyme to the pot. Stir to combine.
  3. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  4. Stir in the frozen mixed vegetables. Cover and continue to simmer for another 10-15 minutes, or until the potatoes and vegetables are tender.
  5. Season with salt and pepper to taste. Serve hot.

You can customize the seasonings to taste.
