  • Salt and pepper to taste

  • 4 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 cups beef broth
  • 1 cup red wine
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat and sear the roast on all sides until browned, about 5 minutes per side.
  3. Remove the roast and add onion and garlic to the pot; cook until softened, about 3 minutes.
  4. Return the roast to the pot and add carrots, potatoes, beef broth, red wine, rosemary, and thyme.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours or until the meat is tender.
  6. Remove the roast and vegetables from the pot; let rest before slicing.
  7. Skim fat from the cooking liquid and serve as gravy if desired.
