A tender and flavorful brisket cooked to perfection in a slow cooker, topped with a rich balsamic onion gravy.

For the Crust:

  • 3 lbs beef brisket
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp cornstarch (for gravy)

Instructions

1. Prepare the Crust:

  1. Season the brisket generously with salt, pepper, smoked paprika, and thyme.
  2. Place the sliced onions and minced garlic at the bottom of the slow cooker.
  3. Lay the seasoned brisket on top of the onions and garlic.
  4. In a bowl, whisk together beef broth, balsamic vinegar, brown sugar, and Worcestershire sauce. Pour over the brisket.
  5. Cover and cook on low for 8-10 hours or on high for 5-6 hours, until the brisket is tender.
  6. Remove the brisket and let it rest. Meanwhile, strain the cooking liquid and onions into a saucepan.
  7. Mix cornstarch with 2 tbsp water and whisk into the saucepan. Simmer until the gravy thickens.
  8. Slice the brisket against the grain and serve with the balsamic onion gravy.
