A tender and flavorful brisket cooked to perfection in a slow cooker, topped with a rich balsamic onion gravy.

For the Crust:
- 3 lbs beef brisket
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup balsamic vinegar
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp cornstarch (for gravy)
Instructions
1. Prepare the Crust:
- Season the brisket generously with salt, pepper, smoked paprika, and thyme.
- Place the sliced onions and minced garlic at the bottom of the slow cooker.
- Lay the seasoned brisket on top of the onions and garlic.
- In a bowl, whisk together beef broth, balsamic vinegar, brown sugar, and Worcestershire sauce. Pour over the brisket.
- Cover and cook on low for 8-10 hours or on high for 5-6 hours, until the brisket is tender.
- Remove the brisket and let it rest. Meanwhile, strain the cooking liquid and onions into a saucepan.
- Mix cornstarch with 2 tbsp water and whisk into the saucepan. Simmer until the gravy thickens.
- Slice the brisket against the grain and serve with the balsamic onion gravy.
