For the Crust:
- 8 slices sourdough bread
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 1 cup fresh spinach, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter, softened
Instructions
1. Prepare the Crust:
- In a bowl, mix ricotta cheese, sun-dried tomatoes, spinach, garlic powder, dried basil, and red pepper flakes until well combined.
- Spread the ricotta mixture evenly on 4 slices of bread. Sprinkle mozzarella cheese on top, then cover with the remaining bread slices.
- Butter the outer sides of each sandwich. Heat a skillet over medium-low heat and cook the sandwiches for 3-4 minutes per side, or until golden brown and the cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
