For the Crust:

  • 8 slices sourdough bread
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup fresh spinach, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter, softened

Instructions

1. Prepare the Crust:

  1. In a bowl, mix ricotta cheese, sun-dried tomatoes, spinach, garlic powder, dried basil, and red pepper flakes until well combined.
  2. Spread the ricotta mixture evenly on 4 slices of bread. Sprinkle mozzarella cheese on top, then cover with the remaining bread slices.
  3. Butter the outer sides of each sandwich. Heat a skillet over medium-low heat and cook the sandwiches for 3-4 minutes per side, or until golden brown and the cheese is melted.
  4. Remove from heat, let cool slightly, then slice and serve warm.
