- 2 cups grated zucchini
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 3 large eggs
- 1 cup vegetable oil
- 2 cups granulated sugar
- 3 teaspoons vanilla extract
- 1 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350Β°F (175Β°C) and grease two loaf pans.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- In another bowl, beat eggs, oil, sugar, and vanilla until well combined.
- Stir in grated zucchini and walnuts if using.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Pour batter into prepared pans and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a healthier version, substitute half the oil with applesauce. Store in an airtight container for up to 5 days.
