Ingredients

  • 2 cups grated zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 3 teaspoons vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and grease two loaf pans.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, beat eggs, oil, sugar, and vanilla until well combined.
  4. Stir in grated zucchini and walnuts if using.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Pour batter into prepared pans and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a healthier version, substitute half the oil with applesauce. Store in an airtight container for up to 5 days.
