Big Mamas Cinnamon Roll Cake

A warm, gooey, and incredibly easy coffee cake that captures all the delicious flavors of a classic cinnamon roll in a simple sheet cake form.

For the Crust:

  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1 1/2 cups milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup butter, melted
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 2 tablespoons flour
  • 1 tablespoon cinnamon
  • 2 cups powdered sugar
  • 5 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix the 3 cups flour, salt, sugar, and baking powder. Stir in the 1 1/2 cups milk, eggs, 2 teaspoons vanilla, and 1/2 cup melted butter until just combined. Pour into the prepared pan.
  3. In a separate bowl, thoroughly mix the 1 cup softened butter, brown sugar, 2 tablespoons flour, and cinnamon. Drop spoonfuls evenly over the cake batter and use a knife to swirl it throughout.
  4. Bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean. While the cake is baking, whisk together the powdered sugar, 5 tablespoons milk, and 1 teaspoon vanilla to make the glaze.
  5. Drizzle the warm cake with the glaze. Serve immediately.

You can customize the seasonings to taste.
