- Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup cherry pie filling
- Topping:
- 1 cup whipped cream
- 1/2 cup chocolate shavings
- Fresh cherries for garnish
Instructions
- Preheat oven to 325Β°F (163Β°C) and grease a 9-inch springform pan.
- In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and continue beating until well combined.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
- Pour half of the cream cheese mixture over the crust. Spoon cherry pie filling over the mixture, then top with the remaining cream cheese mixture.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Refrigerate the cheesecake for at least 4 hours or overnight before removing from the pan.
- Before serving, top with whipped cream, chocolate shavings, and fresh cherries.
Notes
For best results, use high-quality chocolate and fresh cherries. This cheesecake can be stored in the refrigerator for up to 3 days.
