Description

A rich and indulgent cheesecake featuring layers of chocolate, cherries, and cream cheese.


Ingredients

  • Crust:
  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • Filling:
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup cherry pie filling
  • Topping:
  • 1 cup whipped cream
  • 1/2 cup chocolate shavings
  • Fresh cherries for garnish

Instructions

  1. Preheat oven to 325Β°F (163Β°C) and grease a 9-inch springform pan.
  2. In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and continue beating until well combined.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
  5. Pour half of the cream cheese mixture over the crust. Spoon cherry pie filling over the mixture, then top with the remaining cream cheese mixture.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool inside with the door slightly open.
  7. Refrigerate the cheesecake for at least 4 hours or overnight before removing from the pan.
  8. Before serving, top with whipped cream, chocolate shavings, and fresh cherries.

Notes

For best results, use high-quality chocolate and fresh cherries. This cheesecake can be stored in the refrigerator for up to 3 days.
