Instructions
1. Prepare the Crust:
- In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
- Gently fold the thawed whipped topping into the cream cheese mixture until fully combined and no streaks remain.
- Spoon the cheesecake filling into the chocolate cookie crust and spread it into an even layer.
- Chill in the refrigerator for at least 4 hours, or until set. Top with the cherry pie filling and garnish with chocolate shavings before serving.
