A delicious and easy blackened salmon recipe infused with miso flavors, served with a refreshing coconut cucumber salad.


Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons miso paste
  • 1 tablespoon blackening seasoning
  • 2 cucumbers, sliced
  • 1/2 cup coconut milk
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

Instructions

  1. Pat the salmon fillets dry and rub with miso paste and blackening seasoning. Let marinate for 15 minutes.
  2. In a bowl, mix sliced cucumbers, coconut milk, cilantro, and lime juice. Season with salt and pepper, then refrigerate.
  3. Heat olive oil in a skillet over medium-high heat. Cook salmon fillets for 4-5 minutes per side until blackened and cooked through.
  4. Serve the salmon with the coconut cucumber salad on the side.

Notes

For extra spice, add more blackening seasoning. Pairs well with rice.
