A delicious and easy blackened salmon recipe infused with miso flavors, served with a refreshing coconut cucumber salad.
Ingredients

- 4 salmon fillets (6 oz each)
- 2 tablespoons miso paste
- 1 tablespoon blackening seasoning
- 2 cucumbers, sliced
- 1/2 cup coconut milk
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper to taste
- 1 tablespoon olive oil for cooking
Instructions
- Pat the salmon fillets dry and rub with miso paste and blackening seasoning. Let marinate for 15 minutes.
- In a bowl, mix sliced cucumbers, coconut milk, cilantro, and lime juice. Season with salt and pepper, then refrigerate.
- Heat olive oil in a skillet over medium-high heat. Cook salmon fillets for 4-5 minutes per side until blackened and cooked through.
- Serve the salmon with the coconut cucumber salad on the side.
Notes
For extra spice, add more blackening seasoning. Pairs well with rice.
