Ingredients

  • 2 cups fresh blueberries
  • 1 cup low-fat cottage cheese
  • 4 large eggs
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 1 cup oats
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and grease a baking dish.
  2. In a large bowl, whisk together the eggs, cottage cheese, almond milk, vanilla extract, and honey.
  3. Stir in the oats, baking powder, and salt until well combined.
  4. Gently fold in the blueberries.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes or until golden and set.
  7. Allow to cool for 10 minutes before serving.

Notes
