- 2 cups fresh blueberries
- 1 cup low-fat cottage cheese
- 4 large eggs
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/4 cup honey
- 1 cup oats
- 1 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 375Β°F (190Β°C) and grease a baking dish.
- In a large bowl, whisk together the eggs, cottage cheese, almond milk, vanilla extract, and honey.
- Stir in the oats, baking powder, and salt until well combined.
- Gently fold in the blueberries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes or until golden and set.
- Allow to cool for 10 minutes before serving.
Notes
This bake can be refrigerated for up to 3 days and is great for meal prep. For a vegan version, substitute eggs with flax eggs.
