A delicious dessert bar featuring a creamy cheese filling and fresh blueberries on a crumbly base.

- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Filling:
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Topping:
- 2 cups fresh blueberries
- 1/4 cup blueberry jam
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove and let cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
- Pour the cream cheese mixture over the cooled crust and spread evenly.
- In a small bowl, mix blueberries and blueberry jam, then spoon over the cream cheese layer.
- Bake for 25-30 minutes or until the center is set. Cool completely before refrigerating for at least 2 hours.
- Cut into bars and serve.
Notes
For best results, use fresh blueberries. Store leftovers in an airtight container in the refrigerator for up to 3 days.
